Dry Ingredients

  • 1 cup teff flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt

Wet Ingredients

  • 1 ½ large ripe bananas mashed well
  • ½ cup milk of your choice
  • 2 Tbsp olive oil
  • 2 Tbsp plain yoghurt
  • 1 large egg
  • 1 tsp vanilla extract

Directions

  1. Preheat the oven to 350 degrees.
  2. Mix the dry ingredients in a large bowl.
  3. Whisk the wet ingredients in a second large bowl until well combined.
  4. Add the dry mix to the wet ingredients and stir just until the dry ingredients are moistened.
  5. Divide the batter among 12 paper muffin cups.
  6. Bake for 12-15 minutes, just until tops are springy to the touch.

Tips: Delicious, kid-friendly muffins made with teff flour – NO added sweeteners of any kind!
