Sweet Teff Chocolate Banana Bread

A gluten-free, naturally sweet bread packed with the goodness of Teff. Perfect for breakfast, snack, or dessert!

Ingredients

  • (Makes 1 loaf)
  • • 1 cup Teff
  • • ½ cup almond flour or oat flour
  • • 1 teaspoon baking soda
  • • ½ teaspoon baking powder
  • • ¼ teaspoon salt
  • • 1 teaspoon cinnamon
  • • 2 ripe bananas, mashed
  • • ¼ cup maple syrup or honey
  • • 2 eggs (or 2 flax eggs for vegan option)
  • • ¼ cup coconut oil, melted
  • • 1 teaspoon vanilla extract
  • • ½ cup dark chocolate chips or chunks (optional)
  • • ¼ cup chopped nuts (optional)

Instructions

  • Preheat Oven: Preheat your oven to 180°C (350°F). Grease or line a loaf pan with parchment paper.
  • In a large bowl, combine: Teff, almond or oat flour, Baking soda, baking powder, salt, cinnamon, & Mix well.
  • In another bowl, mash bananas and mix with: Maple syrup or honey, Eggs or flax eggs, Coconut oil & Vanilla extract. Combine until smooth.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fold in chocolate chips and nuts if using.
  • Pour batter into the loaf pan. Bake for 40–50 minutes, or until a toothpick inserted in the centre comes out clean.
  • Let it cool for 10 minutes in the pan, then remove and cool completely on a wire rack.

Tip: Teff gives this bread a slightly nutty, earthy flavour that pairs beautifully with blueberries, shredded coconut, or cinnamon chips for variety. For a vegan version, replace eggs with flax eggs and use maple syrup instead of honey.
