A gluten-free, naturally sweet bread packed with the goodness of Teff. Perfect for breakfast, snack, or dessert!
Ingredients
- (Makes 1 loaf)
- • 1 cup Teff
- • ½ cup almond flour or oat flour
- • 1 teaspoon baking soda
- • ½ teaspoon baking powder
- • ¼ teaspoon salt
- • 1 teaspoon cinnamon
- • 2 ripe bananas, mashed
- • ¼ cup maple syrup or honey
- • 2 eggs (or 2 flax eggs for vegan option)
- • ¼ cup coconut oil, melted
- • 1 teaspoon vanilla extract
- • ½ cup dark chocolate chips or chunks (optional)
- • ¼ cup chopped nuts (optional)
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F). Grease or line a loaf pan with parchment paper.
- In a large bowl, combine: Teff, almond or oat flour, Baking soda, baking powder, salt, cinnamon, & Mix well.
- In another bowl, mash bananas and mix with: Maple syrup or honey, Eggs or flax eggs, Coconut oil & Vanilla extract. Combine until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in chocolate chips and nuts if using.
- Pour batter into the loaf pan. Bake for 40–50 minutes, or until a toothpick inserted in the centre comes out clean.
- Let it cool for 10 minutes in the pan, then remove and cool completely on a wire rack.
