Sunflower Seed Pesto

Ingredients

1 cup raw sunflower seeds
2 cups fresh basil leaves
2 cloves garlic
1/2 cup grated Parmesan cheese
1/2 cup extra-virgin olive oil
Salt and pepper, to taste
Juice of 1 lemon

Directions

  1. Toast the Sunflower Seeds in a dry skillet over medium heat, until lightly golden and fragrant. Let them cool.
  2. Blend the Ingredients: In a food processor, combine the toasted sunflower seeds, basil leaves, garlic, and parmesan cheese. Pulse until well combined. While the processor is running, slowly drizzle the olive oil over the mixture until the pesto reaches your desired consistency.
  3. Season with salt, pepper, and lemon juice to taste.
  4. Serve and Enjoy: Use the sunflower seed pesto as a pasta sauce, spread it on toast, or mix it into salads.
  5. Store your pesto in an airtight container in the refrigerator.
