Gluten-Free & Spiced
Ingredients:
- 1 ½ cups teff flour
- ½ cup almond flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
Wet ingredients:
- 3 large eggs
- ½ cup maple syrup or honey
- ½ cup coconut oil, melted
- 1 tsp vanilla extract
- ½ cup unsweetened applesauce
Method:
- Preheat oven to 175°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.
- In a medium bowl, whisk together teff flour, almond flour, baking powder, baking soda, salt, and spices.
- In a large bowl, beat eggs, maple syrup, coconut oil, vanilla, and applesauce until smooth.
- Gradually fold the dry ingredients into the wet mixture. Stir in dried fruit, nuts, and orange zest if using.
- Pour batter into prepared pan and bake for 40–45 minutes, or until a toothpick inserted in the centre comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy with tea or coffee.
Optional for decorating:
½ cup chopped nuts (pecans, walnuts)
½ cup dried cranberries or raisins
¼ cup dark chocolate chips or a dusting of powdered sugar.
