Festive Teff Cake

Gluten-Free & Spiced

Ingredients:

  • 1 ½ cups teff flour
  • ½ cup almond flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves

Wet ingredients:

  • 3 large eggs
  • ½ cup maple syrup or honey
  • ½ cup coconut oil, melted
  • 1 tsp vanilla extract
  • ½ cup unsweetened applesauce

Method:

  1. Preheat oven to 175°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a medium bowl, whisk together teff flour, almond flour, baking powder, baking soda, salt, and spices.
  3. In a large bowl, beat eggs, maple syrup, coconut oil, vanilla, and applesauce until smooth.
  4. Gradually fold the dry ingredients into the wet mixture. Stir in dried fruit, nuts, and orange zest if using.
  5. Pour batter into prepared pan and bake for 40–45 minutes, or until a toothpick inserted in the centre comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Slice and enjoy with tea or coffee.

Optional for decorating:
½ cup chopped nuts (pecans, walnuts)
½ cup dried cranberries or raisins
¼ cup dark chocolate chips or a dusting of powdered sugar.
