Gluten-Free
Ingredients:
- 1 ½ cups teff flour
- ½ cup almond flour or oat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
Wet ingredients:
- 3 large eggs
- ⅓ cup maple syrup or honey
- ⅓ cup coconut oil or melted butter
- 1 tsp vanilla extract
- ½ cup unsweetened applesauce (or mashed banana)
Method:
- Preheat oven to 175°C (350°F). Grease and line a loaf pan with parchment paper.
- In a medium bowl, whisk together teff flour, almond flour, baking powder, baking soda, salt, and spices.
- In a large bowl, beat together eggs, maple syrup, coconut oil, vanilla extract, and applesauce until smooth.
- Gradually add the dry ingredients to the wet, stirring gently until just combined. Fold in nuts, dried fruit, or
- chocolate chips if using.
- Pour batter into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted into the centre
- comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy as is, or spread with a little nut butter, cream cheese, or festive jam!
Optional for decorating:
½ cup chopped nuts (pecans, walnuts)
½ cup dried cranberries or raisins
¼ cup dark chocolate chips
