Festive Spiced Teff Loaf

Ingredients:

  • 1 ½ cups teff flour
  • ½ cup almond flour or oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves

Wet ingredients:

  • 3 large eggs
  • ⅓ cup maple syrup or honey
  • ⅓ cup coconut oil or melted butter
  • 1 tsp vanilla extract
  • ½ cup unsweetened applesauce (or mashed banana)

Method:

  1. Preheat oven to 175°C (350°F). Grease and line a loaf pan with parchment paper.
  2. In a medium bowl, whisk together teff flour, almond flour, baking powder, baking soda, salt, and spices.
  3. In a large bowl, beat together eggs, maple syrup, coconut oil, vanilla extract, and applesauce until smooth.
  4. Gradually add the dry ingredients to the wet, stirring gently until just combined. Fold in nuts, dried fruit, or
  5. chocolate chips if using.
  6. Pour batter into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted into the centre
  7. comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and enjoy as is, or spread with a little nut butter, cream cheese, or festive jam!

Optional for decorating:
½ cup chopped nuts (pecans, walnuts)
½ cup dried cranberries or raisins
¼ cup dark chocolate chips
