Salted Chocolate Peanut Teff Bars

chocolate & peanuts with a dash of salt

Ingredients:

  • 1 cup brown Teff grain
  • ¼ cup roughly chopped roasted, unsalted peanuts
  • ¼ cup honey
  • 1 tablespoon creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • ¼ cup roughly chopped dark chocolate (1.25 ounces)
  • ½ teaspoon flake salt

Directions

  1. Place a medium bowl near the stove. Line a cutting board with parchment & draw an 8×8-inch square in the centre.
  2. In a skillet over medium-high heat, toast teff until it starts popping and smells nutty, about 2 minutes. Stir in peanuts and set aside.
  3. In a pot, boil honey over medium heat. Lower the heat, swirl, then simmer 1 minute. Whisk in peanut butter, simmer 1 more minute. Stir in vanilla and sea salt.
  4. Mix in the toasted teff and peanuts. Spread onto parchment in a loose 8×8-inch layer. 4. Cool 5 minutes.
  5. Sprinkle chocolate on top and press it in evenly. Smooth into the square shape using your fingers, a spatula, or a baking dish. Sprinkle flake salt on top.
  6. Let firm for 10 minutes, then cut into 16 squares. Bars will continue to firm as they cool.

Tip: These yummy snacks can be saved in an airtight container in the fridge for about a month and up to three months in the freezer.
