Teff Apple Crumble Pie

Pie Crust Ingredients:

  • 2 cups Teff flour
  • ½ cup maple syrup
  • ½ cup neutral-flavoured oil
  • ½ tsp sea salt

Filling Ingredients:

  • 5 large apples such as Rome, Mackintosh or Cortland varieties, sliced.
  • 1 Pinch of sea salt.
  • 1 Tbsp kuzu or arrowroot dissolved in 1/4 cup of cold water.
  • 1 1/2 tsp cinnamon

Directions

  1. Preheat the oven to 375°F.1.2.
  2. In a medium bowl, combine all the ingredients and mix thoroughly. Gather or roll into a ball.
  3. Use your fingers to press the dough into a pie pan, then prick a few times with a fork. Trim the edges or decorate. Save leftover dough for crumbles for the pie topping.
  4. Bake for around 20 minutes until firm and no longer moist.
  5. Now prepare the pie filling:
  6. Simmer apples in a 2-quart saucepan with a pinch of sea salt until tender, about 30 minutes.
  7. Add in dissolved kuzu or arrowroot and cinnamon and stir until thickened.
  8. Pour into the prepared pie crust. Crumble the remaining dough crumbs on top.
  9. Bake another 10 minutes or until the crumbles turn a light brown.
